Lentil salad with marinated salmon

It’s a lentil salad with marinated salmon, that you will be able to save for 3 days with our KROKEN jars, so this preparation is ideal to make in advance. Besides, the combination of herbs, spices and oil will provide the meal of a very special taste ; )

INGREDIENTS

For the KORKEN jar:
  • 300 gr. of SJÖRAPPORT salmon fillet
  • SOMMARSKÖRD pickled gherkins
  • Fresh dill
  • Lemon pepper
  • Extra virgin olive oil
For the salad:
  • 300 gr. of boiled lentils
  • 1 red pepper
  • 1 green apple

PREPARATION

We will start with the preparation of the KORKEN.

  1. We will cut the salmon in dices, add salt and pepper on it and put it in the jar.
  2. We will add 12 pickled gherkins slices, as many fresh herbs as your like and we will fill the jar extra virgin olive oil.
  3. We mix everything, close the jar, and let the salmon marinate for 20 minutes.
Hereafter, we will make the lentil salad.
  1. We will chop the pepper, green apple and red onion in little pieces.
  2. We will add the drained lentils in a bowl, as well as 25 slices of pickled gherkins, aromatic herbs chopped as you wish, and oil, salt and pepper.
  3. To conclude, when serving the salad, we will add our previously marinated salmon dices.
